Smoked Bologna

- Bologna
- Butter, Mayo, Mustard, Honey - just a binder/smear
- Favorite Spices -- I like Slap yo Mama, or TexJoy
Directions[edit | edit source]
- Score the meat, usually diamond pattern to let the smoke go deeper.
- Smear to add a binder (something to stick to)
- Smoke @ 225 for 3-4 hours... you never need to get temp above 145 since it's pre-cooked. You're just adding flavor.

Kind of a unique thick ham like thing that you can eat like a burger.
